Abstract

In 1993, Philip Chiang and Paul Fleming started PF Chang's, the first multi-unit restaurant concept in the US, which made use of 2,000-year-old tradition of wok cooking. From its initial days, PF Chang's chefs were trained to make hand-rolling dim sum, hand chopping and slicing all vegetables and meats. In every PF Chang's restaurant food was prepared from the scratch every day. However, after the outbreak of COVID-19 pandemic in 2020, the restaurants were highly affected due to subsequent lockdowns. Also, there was an incredible shift in the dining habits and industry practices. Seeing this drastic change and to meet the changing demands of the customers, PF Chang's launched its 'To Go Concept', which offered solution for online ordering, takeout, catering and delivery. These locations of PF Chang's were smaller in size compared to the traditional locations and allowed guests to enjoy PF Chang's favourites at their office, home or on the go. Amidst this scenario, whether the To Go store concept would work for the brand in the coming years?
