Abstract
The case study traces the developments of a contract between Sutcliffe Catering Southern Ltd. and P & O European Ferries (Portsmouth) Ltd., both member companies of the P & O Group. The contract focus is the provision of catering and ancillary services to ferry passengers travelling between Portsmouth and Le Havre and Cherbourg. The case documents the transition between self-catering and contract catering, including market research findings, a competitor review and the operations analysis and organisational review that took place between 1989 and 1990. The purpose is to demonstrate a complex array of operational and organisational issues emerging from Sutcliffe''s entry into a new and fast growing contract market.
