Abstract

The case deals with the evolution of Dominique Crenn as a pioneering chef in the world of luxury gastronomy. The case illustrates Chef Crenn's journey to three Michelin stars and celebrity chef status in San Francisco. The case describes Chef Crenn's three well-regarded French-inspired restaurants in San Francisco. Opened in 2011, the first, Atelier Crenn, is an exclusive three-Michelin-starred restaurant offering an innovative, high-quality dining experience. The second restaurant, Petit Crenn, began in 2015 as family-style restaurant serving breakfast and lunch as well as dinner. The third restaurant is Bar Crenn, a one-Michelin-starred premium restaurant that started by offering a more limited menu fine dining experience; it is next door to Atelier Crenn. All three restaurants were seriously affected by the COVID-19 pandemic lockdowns that required restaurants to close in 2020 as well as erratic reopening guidelines. The case shows how Chef Crenn had to pivot her culinary business after the onset of the pandemic, including taking drastic measures such as laying off many staff members. Chef Crenn faced several dilemmas. How will her culinary empire evolve in light of the impacts of the ever-changing pandemic? How did consumer behaviors change during the pandemic, which changes are permanent and which ones are temporary, and how will that affect the future of Crenn's restaurants? What must Crenn do to maintain her preeminent brand, Atelier Crenn, while remaining consistent to her values?
